Ingredients
  

  • 8 oz Rice noodles (or preferred noodle type)
  • ½ cup Creamy peanut butter
  • 300 ml Light soy sauce (or tamari for gluten-free)
  • 2 tbsp Sesame oil
  • 2 tbsp Rice vinegar
  • 2 tbsp Honey (or maple syrup for vegan option)
  • 1 tbsp Grated fresh ginger
  • 2 Cloves garlic, minced
  • ¼ cup Water (to adjust sauce consistency)
  • ½ cup Shredded carrots
  • ½ cup Sliced bell peppers (any color)
  • ¼ cup Chopped green onions
  • Chopped cilantro (for garnish)
  • Crushed peanuts (for topping)

Instructions
 

  • Prepare the Noodles: Bring a large pot of salted water to a boil. Add rice noodles and cook according to package directions (5-7 minutes, al dente). Drain and rinse under cold water to stop the cooking. Set aside.

  • Make the Peanut Sauce: In a bowl, mix peanut butter, soy sauce, sesame oil, rice vinegar, honey, ginger, and garlic. Whisk until smooth. If too thick, add water to reach a pourable consistency. Adjust seasoning as needed.

  • Combine Ingredients: In a large bowl, mix the noodles, shredded carrots, and bell peppers. Pour the peanut sauce over and toss to coat.

  • Serve and Garnish: Plate the noodles and garnish with chopped green onions, crushed peanuts, cilantro, and sesame seeds. Serve immediately, warm or chilled.
