Ingredients
  

  • 1 medium Green cabbage, chopped
  • 2 large Carrots, sliced
  • 2 Bell peppers (any color), diced
  • 1 large Onion, chopped
  • 4 Garlic cloves, minced
  • 1 (14 oz) can diced tomatoes
  • 4 cups Vegetable or chicken broth
  • 1 tsp Dried oregano
  • 1 tsp Smoked paprika
  • 2 tbsp Olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions
 

Sauté the Veggies

  • - Heat 2 tbsp olive oil in a large pot over medium heat.
    - Add chopped onions, minced garlic, sliced carrots, and diced bell peppers.
    - Sauté for 5 minutes until slightly softened.

Add Cabbage & Spices

  • - Stir in chopped cabbage, canned diced tomatoes, vegetable broth, dried oregano, smoked paprika, salt, and pepper. Mix well.

Simmer

  • - Bring the mixture to a boil, then reduce heat and let it simmer for 30-40 minutes, stirring occasionally, until the cabbage is soft.

  • - Pour into bowls, garnish with fresh parsley, and serve with toasted bread or crackers for a hearty meal.
