2 large Cucumbers (or 4 Persian cucumbers). 1 teaspoon Salt. 2 Cloves garlic (minced). 2 tablespoons Rice vinegar. 1 tablespoon Soy sauce (or tamari for gluten-free). 1 teaspoon Sesame oil. 1 teaspoon Sugar or honey. ½ teaspoon Red pepper flakes. 1 tablespoon Sesame seeds. 2 Stalks green onions (sliced). Optional: chili oil, crushed peanuts, fresh cilantro.
Slice cucumbers thinly and salt them for 10 minutes to draw out moisture. Rinse and pat dry.
