- 2 tbsp olive oil
- 1 chopped onion
- 3 sliced carrots
- 2 diced celery stalks
- 4 minced garlic cloves
- 2 tbsp tomato paste
- 1 cup red wine (optional)
- 3 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and black pepper to taste
Sear the Meat: Pat dry and sear beef shanks in oil until browned; remove and set aside.
