3 cups Cooked pasta (rotini, fusilli, or penne works best) 1 cup Cherry tomatoes, halved 1 Cucumber, sliced into half-moons ½ Red onion, thinly sliced 1 Red bell pepper, diced ½ cup Black olives, sliced ¼ cup Fresh basil, chopped ½ cup Feta cheese, crumbled (optional) ¼ cup Olive oil 2 tablespoons Red wine vinegar 1 tablespoon Dijon mustard 1 teaspoon Honey or maple syrup 1 Garlic clove, minced Salt and pepper, to taste ½ teaspoon Dried oregano ½ teaspoon Dried basil 1 tablespoon Fresh lemon juice
Cook the Pasta: Boil 1 ½ quarts of salted water, cook pasta until al dente (8-10 minutes). Drain and rinse with cold water. Set aside to cool.
Prepare the Vegetables: Slice cucumbers, halved cherry tomatoes, dice bell peppers, and thinly sliced red onion. Combine in a large bowl.
Make the Dressing: Whisk olive oil, red wine vinegar, Dijon mustard, honey, garlic, oregano, basil, lemon juice, salt, and pepper until smooth.
Assemble the Salad: Add cooled pasta to the vegetables, pour the dressing over, and toss to coat evenly.
