- 12 oz Spaghetti
- 1 Ib Ground beef (or turkey)
- 1 small Onion, diced
- 2 Cloves garlic, minced
- 1 Packet taco seasoning
- 10 oz Rotel tomatoes (or diced tomatoes + green chilies)
- 1 cup Salsa (mild or spicy)
- 2 cups Beef broth (or chicken/vegetable broth)
- 1 cup Shredded cheddar cheese
- ½ cup Shredded Monterey Jack cheese
- ½ cup Sour cream (or Greek yogurt)
- 1 tbsp Olive oil
Sauté the Aromatics
- Heat olive oil at medium heat in a skillet.- Add diced onions, and cook for 3 minutes.- Add minced garlic, and cook for 30 seconds.
Cook the Meat
- Add ground beef, breaking it up as it cooks (5–7 minutes).- Drain excess grease.
Season & Simmer
- Stir in taco seasoning, Rotel tomatoes, salsa, and beef broth.- Let it simmer for 5 minutes.
Combine Pasta & Cheese
- Add cooked spaghetti and mix well.- Stir in cheddar and Monterey Jack cheese until melted.- Mix in sour cream for creaminess.
