Ingredients
  

  • 12 oz Spaghetti
  • 1 Ib Ground beef (or turkey)
  • 1 small Onion, diced
  • 2 Cloves garlic, minced
  • 1 Packet taco seasoning
  • 10 oz Rotel tomatoes (or diced tomatoes + green chilies)
  • 1 cup Salsa (mild or spicy)
  • 2 cups Beef broth (or chicken/vegetable broth)
  • 1 cup Shredded cheddar cheese
  • ½ cup Shredded Monterey Jack cheese
  • ½ cup Sour cream (or Greek yogurt)
  • 1 tbsp Olive oil

Instructions
 

Cook the Pasta

  • Boil spaghetti in salted water until al dente. Drain and set aside.

  • - Heat olive oil at medium heat in a skillet.
    - Add diced onions, and cook for 3 minutes.
    - Add minced garlic, and cook for 30 seconds.

Cook the Meat

  • - Add ground beef, breaking it up as it cooks (5–7 minutes).
    - Drain excess grease.

Season & Simmer

  • - Stir in taco seasoning, Rotel tomatoes, salsa, and beef broth.
    - Let it simmer for 5 minutes.

  • - Add cooked spaghetti and mix well.
